Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 1-2 carrots, chopped
- 1-2 red bell peppers, chopped (or roasted for depth)
- 1 cup red lentils, rinsed
- 4-5 cups vegetable broth or water
- 1-2 tbsp tomato paste
- 1 tsp cumin, ½ tsp paprika, Aleppo pepper or red flakes to taste
- Salt, pepper, lemon wedges

Instructions
