Ingredients
  • 14 oz extra-firm tofu, pressed and crumbled
  • 4 cups cooked brown rice (day-old best)
  • 2 cups mixed vegetables (carrots, peas, corn, bell peppers)
  • 3-4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3-4 tbsp low-sodium soy sauce or tamari
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • Optional: 1 tsp chili flakes or sriracha
Instructions
  1. 1In a large wok or pot, heat sesame oil. Brown crumbled tofu for 5 minutes; push to side.
  2. 2Add garlic, ginger, and vegetables; stir-fry 4-5 minutes.
  3. 3Add rice, soy sauce, and mix everything well. Cook 5 minutes until heated and slightly crispy. Garnish with green onions. Serve immediately.
