One Pot Tofu Vegetable Fried Rice (Healthy) — a healthy halal vegetarian recipe with 320 calories and 15g protein per serving.
Ingredients
- 14 oz extra-firm tofu, pressed and crumbled
- 4 cups cooked brown rice (day-old best)
- 2 cups mixed vegetables (carrots, peas, corn, bell peppers)
- 3-4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3-4 tbsp low-sodium soy sauce or tamari
- 1 tbsp sesame oil
- 2 green onions, sliced
- Optional: 1 tsp chili flakes or sriracha
Instructions
- 1In a large wok or pot, heat sesame oil. Brown crumbled tofu for 5 minutes; push to side.
- 2Add garlic, ginger, and vegetables; stir-fry 4-5 minutes.
- 3Add rice, soy sauce, and mix everything well. Cook 5 minutes until heated and slightly crispy. Garnish with green onions. Serve immediately.
