Ingredients
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated

- 4 cups vegetable broth

Instructions
- 1Sauté onion, garlic, ginger. Add spices and tomatoes; cook 3 minutes.
- 2Add lentils and broth. Simmer 20 minutes until lentils dissolve.
- 3Stir in coconut milk or yogurt. Blend if smoother texture desired. Finish with lemon and herbs.
