One Pot Lentil Cauliflower Soup (Creamy Healthy) — a healthy halal vegetarian recipe with 250 calories and 15g protein per serving.
Ingredients
- 1 tbsp olive or coconut oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1-2 tbsp curry powder
- 1 tsp cumin
- 1 medium cauliflower, cut into florets
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 (14 oz) can coconut milk or almond milk for lighter version
- Salt, pepper, and lemon juice to taste
- Optional: Carrots, spinach for extra veggies
Instructions
- 1Sauté onion, garlic, and ginger in oil for 5 minutes. Add spices and cook 1 minute.
- 2Add cauliflower, lentils, and broth. Bring to boil, then simmer 20 minutes until lentils and cauliflower are tender.
- 3Blend partially with immersion blender for creaminess (or leave chunky). Stir in coconut milk and heat through. Season and add lemon.
