One Pot Green Lentil Vegetable Curry (Mild) — a healthy halal vegetarian recipe with 260 calories and 12g protein per serving.
Ingredients
- 1 cup green lentils, rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, cubed
- 1 zucchini or spinach (added later)
- 1 (14 oz) can coconut milk or diced tomatoes
- 1 tbsp mild curry powder, 1 tsp turmeric
- 1 tbsp ginger-garlic paste
- 2 tbsp oil, salt, fresh cilantro
Instructions
- 1Sauté onion in oil. Add ginger-garlic and spices; cook 1 minute.
- 2Add lentils, carrots, potatoes, and 3 cups water. Simmer 25-30 minutes until lentils are soft.
- 3Stir in coconut milk or tomatoes and zucchini/spinach. Simmer 5-10 minutes. Garnish and serve with rice.
