Ingredients
- 2 (15 oz) cans chickpeas, drained
- 1 large onion, 4 garlic cloves, 1 tbsp ginger
- 1 (10-12 oz) bag spinach, chopped
- 1 (15 oz) can diced tomatoes
- 2 tsp garam masala, 1 tsp cumin, 1 tsp turmeric, chili powder
- ½ cup coconut milk or yogurt, 1 tbsp oil, salt
Instructions
- 1Sauté onion in oil until golden. Add garlic, ginger, and spices; cook 1 min.
- 2Stir in tomatoes and chickpeas. Simmer 10 min.
- 3Add spinach and coconut milk. Cook 5-8 min until spinach wilts and sauce thickens. Serve with rice or naan.
