Ingredients
- 2 medium eggplants, cubed
- 1 (28 oz) can crushed tomatoes or fresh
- 12 oz pasta (penne or rigatoni)
- 4 garlic cloves, sliced
- Olive oil, dried oregano, basil, red pepper flakes
- 1 onion, sliced
- Fresh mozzarella or parmesan (optional), basil leaves
Instructions
- 1Toss eggplant with oil, salt, oregano. Roast in large oven-safe pan at 425°F (220°C) for 20 minutes.
