One Pan Mushroom Tofu Stir Fry (Soy Ginger) — a healthy halal vegetarian recipe with 250 calories and 18g protein per serving.
Ingredients
- 14-16 oz extra-firm tofu, pressed and cubed
- 8-10 oz mushrooms (shiitake, cremini, or button), sliced
- 2-3 tbsp soy sauce or tamari
- 1-2 tbsp fresh ginger, grated
- 3 garlic cloves, minced
- 1 tbsp sesame oil or neutral oil
- 1 tbsp maple syrup or honey (for balance)
- Vegetables: bell peppers, broccoli, or snap peas
- Green onions and sesame seeds for garnish
- Cooked rice for serving
Instructions
- 1Press tofu 10-15 minutes. Brown tofu cubes in hot pan with oil; remove.
- 2In same pan, sauté mushrooms and veggies until golden. Add garlic and ginger.
- 3Return tofu, add soy sauce and sweetener. Stir-fry 3-5 minutes until saucy. Garnish and serve over rice.
