Ingredients
- 1 lb okra, trimmed
- 2 (15 oz) cans chickpeas, drained
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 (28 oz) can crushed tomatoes
- 3 tbsp olive oil
- 1 tsp cumin, 1 tsp coriander, ½ tsp turmeric
- Salt, pepper, and fresh cilantro
Instructions
- 1Heat oil; sauté onion and garlic. Add spices and cook 1 min.
- 2Stir in tomatoes; simmer 10 min. Add okra and chickpeas plus 1 cup water.
- 3Simmer covered 25–30 min until okra is tender.
- 4Garnish with cilantro. Serve with rice.
