Mushroom Biryani (One Pot Vegetarian) — a healthy vegetarian halal recipe with 380 calories and 10g protein per serving.
Ingredients
- 8 oz mushrooms, quartered
- 2 cups basmati rice, rinsed
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2 tsp biryani masala, 1 tsp turmeric, 1 tsp cumin seeds
- 4 cups vegetable broth or water
- 2 tbsp ghee or oil, fresh cilantro and mint, fried onions (optional)
Instructions
- 1Sauté sliced onions in ghee/oil until golden. Add ginger-garlic paste, mushrooms, and spices; cook 5 minutes.
- 2Add tomatoes and cook until soft. Stir in rice and broth. Bring to boil.
- 3Reduce heat, cover, and cook 15-18 minutes until rice is tender. Fluff and rest 5 minutes. Garnish with cilantro, mint, and fried onions.
