Mushroom and Tofu Soup (Miso Inspired) — a healthy vegetarian halal recipe with 160 calories and 12g protein per serving.
Ingredients
- 8 oz mushrooms, sliced
- 8 oz firm tofu, cubed
- 4 cups vegetable broth
- 2-3 tbsp white or red miso paste
- 1 tbsp soy sauce, 1 tsp sesame oil
- 2 scallions, 1-inch ginger, nori strips (optional)
Instructions
- 1Simmer broth with ginger and mushrooms for 10 minutes.
- 2Add tofu and simmer 5 minutes. Remove from heat.
- 3Dissolve miso in a little warm broth then stir into soup. Add soy sauce and sesame oil. Garnish with scallions and nori.
