Ingredients
- 1 cup green or brown lentils, cooked
- 12 oz mushrooms, finely chopped
- 1 onion, 2 carrots, 2 celery stalks
- 2 tbsp tomato paste, 2 tsp Worcestershire sauce (vegetarian)
- 3 cups mashed potatoes (made with milk/butter or plant-based)
- 2 tbsp oil, thyme, salt, pepper
Instructions
- 1Sauté onion, carrot, celery, and mushrooms until browned. Add tomato paste, lentils, herbs, and a splash of water. Simmer 10 minutes.
- 2Transfer filling to baking dish. Top with mashed potatoes and rough up surface.
- 3Bake at 400°F for 25-30 minutes until golden and bubbling.
