Ingredients
- 2 large eggplants
- 3-4 tomatoes, chopped
- 3 garlic cloves, minced
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp chili powder
- 3 tbsp olive oil, salt, fresh cilantro, lemon juice
Instructions
- 1Roast or grill eggplants until soft. Peel and chop the pulp.
- 2Heat olive oil. Cook garlic, tomatoes and spices until thick and saucy.
- 3Add eggplant pulp and mash together. Cook 8-10 min.
- 4Cool completely. Stir in lemon juice and cilantro. Serve cold with bread.
