Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped; 2 carrots, diced; 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, diced; 1 cup green beans, chopped
- 1 tsp cumin, 1 tsp turmeric, ½ tsp cinnamon, ½ tsp ginger, ½ tsp paprika
- 1 (15 oz) can chickpeas, drained
- 1 (15 oz) can diced tomatoes
- 6-7 cups vegetable broth

Instructions
- 1Heat oil; sauté onion, carrots, celery 7 min. Add garlic and spices 2 min.
- 2Add zucchini, green beans, chickpeas, tomatoes, and broth.
- 3Simmer 35-40 min until vegetables are tender. Stir in herbs and serve with lemon.
