Moroccan Tomato and Green Pepper Salad — a healthy halal vegetarian recipe with 130 calories and 3g protein per serving.
Ingredients
- 4 ripe tomatoes, chopped
- 3 green bell peppers, roasted and chopped
- 1 small red onion, thinly sliced
- 2 garlic cloves, minced
- 1 tsp cumin, 1/2 tsp paprika, salt
- 3 tbsp olive oil, fresh parsley, lemon juice
Instructions
- 1Roast peppers until charred. Peel, deseed and chop.
- 2In a bowl, combine tomatoes, peppers, onion and garlic.
- 3Mix olive oil, cumin, paprika, salt and lemon juice into dressing.
- 4Toss salad with dressing. Let sit 10 min. Garnish with parsley. Serve with bread.
