Moroccan Stuffed Tomatoes with Herbed Couscous — a healthy halal vegetarian recipe with 280 calories and 7g protein per serving.
Ingredients
- 8 medium firm tomatoes
- 1 cup couscous, cooked
- 1/4 cup fresh parsley and mint, chopped
- 1 small onion, finely chopped
- 1/4 cup raisins or pine nuts
- 1 tsp cumin, 1/2 tsp cinnamon, salt, black pepper
- 3 tbsp olive oil, lemon zest
Instructions
- 1Cut tops off tomatoes and scoop out pulp (save for sauce).
- 2Mix cooked couscous with onion, herbs, raisins, spices, lemon zest and 2 tbsp olive oil.
- 3Stuff tomatoes with couscous mixture. Place in a baking dish.
- 4Chop tomato pulp with remaining oil and a little water; pour around tomatoes. Bake at 375°F (190°C) for 25-30 min.
