Moroccan Stuffed Tomatoes with Herbed Couscous — a healthy halal vegetarian recipe with 280 calories and 7g protein per serving.

Ingredients
  • 8 medium firm tomatoes
  • 1 cup couscous, cooked
  • 1/4 cup fresh parsley and mint, chopped
  • 1 small onion, finely chopped
  • 1/4 cup raisins or pine nuts
  • 1 tsp cumin, 1/2 tsp cinnamon, salt, black pepper
  • 3 tbsp olive oil, lemon zest
Instructions
  1. 1Cut tops off tomatoes and scoop out pulp (save for sauce).
  2. 2Mix cooked couscous with onion, herbs, raisins, spices, lemon zest and 2 tbsp olive oil.
  3. 3Stuff tomatoes with couscous mixture. Place in a baking dish.
  4. 4Chop tomato pulp with remaining oil and a little water; pour around tomatoes. Bake at 375°F (190°C) for 25-30 min.
