Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 (15-oz) can chickpeas, drained
- ½ cup dried apricots or raisins, chopped
- ¼ cup almonds, toasted and sliced

- 4 cups baby spinach
- Dressing: ¼ cup olive oil, juice of 1 orange + 1 lemon, 1 tsp honey, 1 tsp cumin, ½ tsp cinnamon, ½ tsp paprika, salt & pepper.
Instructions
- 1Preheat oven to 425°F. Toss sweet potatoes with 1 tbsp oil and spices. Roast 25-30 min.
- 2Whisk remaining dressing. Combine roasted sweet potatoes, chickpeas, dried fruit, nuts, and spinach.
- 3Drizzle dressing and toss gently.
