Ingredients
- 2 carrots, 2 parsnips, 1 sweet potato, 1 turnip (all peeled and chopped)
- 1 onion, chopped
- 3 garlic cloves
- 1 tsp cumin, 1 tsp ginger, 1 tsp cinnamon, 1/2 tsp turmeric, 1/2 tsp paprika
- 2 tbsp olive oil, salt, 5 cups vegetable broth, fresh cilantro
Instructions
- 1Heat oil in a pot. Sauté onion and garlic. Add all root vegetables and spices; stir 3-4 min.
- 2Pour in broth and bring to boil.
- 3Simmer covered 30-35 min until vegetables are very soft.
- 4Blend until smooth. Adjust seasoning and garnish with cilantro.
