Moroccan Roasted Cauliflower with Ras el Hanout — a healthy halal vegetarian recipe with 160 calories and 6g protein per serving.
Ingredients
- 1 large head cauliflower, cut into florets
- 2-3 tbsp olive oil
- 1.5 tbsp ras el hanout spice blend
- 1 tsp garlic powder, salt to taste
- 1/4 cup toasted almonds or pine nuts, fresh parsley, lemon wedges
Instructions
- 1Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, ras el hanout, garlic powder and salt.
- 2Spread on a baking sheet in a single layer.
- 3Roast 25-30 min, tossing halfway, until golden and caramelized.
- 4Sprinkle with toasted nuts and parsley. Serve with lemon wedges.
