Moroccan Roasted Beetroot and Orange Salad — a healthy halal vegetarian recipe with 180 calories and 5g protein per serving.
Ingredients
- 4-5 medium beetroots, peeled and cubed
- 2 oranges, segmented
- 1/4 cup crumbled feta or goat cheese optional (halal)
- 1/4 cup pistachios or walnuts, toasted
- 2 tbsp olive oil, 1 tsp cumin, salt, fresh mint
- Dressing: 2 tbsp orange juice, 1 tbsp olive oil, 1 tsp honey, salt
Instructions
- 1Toss beet cubes with olive oil, cumin and salt. Roast at 400°F (200°C) for 35-40 min until tender.
- 2Whisk dressing ingredients.
- 3In a bowl, combine roasted beets, orange segments, nuts and mint. Drizzle dressing.
- 4Top with cheese if using. Serve warm or chilled.
