Ingredients
  • 4-5 medium beetroots, peeled and cubed
  • 2 oranges, segmented
  • 1/4 cup crumbled feta or goat cheese optional (halal)
  • 1/4 cup pistachios or walnuts, toasted
  • 2 tbsp olive oil, 1 tsp cumin, salt, fresh mint
  • Dressing: 2 tbsp orange juice, 1 tbsp olive oil, 1 tsp honey, salt
Instructions
  1. 1Toss beet cubes with olive oil, cumin and salt. Roast at 400°F (200°C) for 35-40 min until tender.
  2. 2Whisk dressing ingredients.
  3. 3In a bowl, combine roasted beets, orange segments, nuts and mint. Drizzle dressing.
