Moroccan Preserved Lemon Chickpea Tagine — a healthy halal vegetarian recipe with 250 calories and 12g protein per serving.
Ingredients
- 2 cans chickpeas, drained
- 1 large onion, sliced
- 2 tomatoes, chopped
- 2 preserved lemons, rinsed and chopped
- 3 garlic cloves, minced
- 1 tsp cumin, 1 tsp ginger, 1 tsp turmeric, 1/2 tsp saffron threads optional
- 2 tbsp olive oil, salt, fresh cilantro, green olives optional
Instructions
- 1Heat oil. Sauté onion and garlic until soft. Add spices and tomatoes; cook 5 min.
- 2Add chickpeas, preserved lemons and 1 cup water. Simmer 20-25 min.
- 3Add olives if using in the last 5 min.
- 4Garnish with cilantro. Serve with couscous or bread.
