Ingredients
  • 2 cans chickpeas, drained
  • 1 large onion, sliced
  • 2 tomatoes, chopped
  • 2 preserved lemons, rinsed and chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin, 1 tsp ginger, 1 tsp turmeric, 1/2 tsp saffron threads optional
  • 2 tbsp olive oil, salt, fresh cilantro, green olives optional
Instructions
  1. 1Heat oil. Sauté onion and garlic until soft. Add spices and tomatoes; cook 5 min.
  2. 2Add chickpeas, preserved lemons and 1 cup water. Simmer 20-25 min.
  3. 3Add olives if using in the last 5 min.
  4. 4Garnish with cilantro. Serve with couscous or bread.
