Moroccan Lentil and Sweet Potato Tagine — a healthy halal vegetarian recipe with 290 calories and 13g protein per serving.
Ingredients
- 1 cup green or brown lentils
- 2 medium sweet potatoes, cubed
- 1 onion, chopped
- 2 carrots, chopped
- 3 garlic cloves
- 1 tsp cumin, 1 tsp ginger, 1 tsp cinnamon, 1 tsp turmeric, 1/2 tsp paprika
- 2 tbsp olive oil, salt, 3-4 cups vegetable broth, fresh parsley, lemon wedges
Instructions
- 1Heat oil in a tagine or heavy pot. Sauté onion, garlic and carrots.
- 2Add spices, lentils and sweet potatoes; stir 2 min.
- 3Pour in broth. Simmer covered 35-40 min until lentils and potatoes are tender.
- 4Finish with lemon and parsley.
