Ingredients
- 2 tbsp olive oil
- 1 large onion, finely chopped; 1 carrot, diced; 2 celery stalks, diced
- 4 garlic cloves, minced
- 1.5 tsp cumin, 1 tsp turmeric, ½ tsp cinnamon, ½ tsp ginger, ½ tsp black pepper
- 1 (28 oz) can crushed tomatoes
- ¾ cup lentils, rinsed
- 1 (15 oz) can chickpeas, drained
- 6-7 cups vegetable broth
- ¼ cup each fresh cilantro and parsley, chopped
- Lemon wedges for serving
Instructions
- 1Sauté onion, carrot, celery 7 min. Add garlic and spices 2 min.
- 2Add tomatoes; cook 5 min. Stir in lentils, chickpeas, and broth.
- 3Simmer 40-45 min until lentils are soft. Stir in herbs. Serve with lemon.
