Moroccan Harira Soup - Vegetarian — a healthy halal vegetarian recipe with 220 calories and 11g protein per serving.
Ingredients
- 1/2 cup chickpeas (soaked), 1/2 cup lentils
- 1 onion, 2 celery stalks, 2 tomatoes (all chopped)
- 1/4 cup rice or broken vermicelli
- 1 tsp cumin, 1 tsp ginger, 1 tsp turmeric, 1/2 tsp cinnamon, 1/2 tsp paprika
- 2 tbsp olive oil, salt, pepper, fresh cilantro and parsley, lemon wedges
Instructions
- 1Heat oil and sauté onion, celery and spices. Add tomatoes and cook down.
- 2Add chickpeas, lentils and 6-7 cups water. Simmer 30 min.
- 3Add rice/vermicelli and simmer until cooked (10-15 min).
- 4Stir in herbs and serve with lemon.
