Moroccan Harira Soup - Vegetarian — a healthy halal vegetarian recipe with 220 calories and 11g protein per serving.

Ingredients
  • 1/2 cup chickpeas (soaked), 1/2 cup lentils
  • 1 onion, 2 celery stalks, 2 tomatoes (all chopped)
  • 1/4 cup rice or broken vermicelli
  • 1 tsp cumin, 1 tsp ginger, 1 tsp turmeric, 1/2 tsp cinnamon, 1/2 tsp paprika
  • 2 tbsp olive oil, salt, pepper, fresh cilantro and parsley, lemon wedges
Instructions
  1. 1Heat oil and sauté onion, celery and spices. Add tomatoes and cook down.
  2. 2Add chickpeas, lentils and 6-7 cups water. Simmer 30 min.
  3. 3Add rice/vermicelli and simmer until cooked (10-15 min).
  4. 4Stir in herbs and serve with lemon.
