Moroccan Couscous with Seven Vegetables — a healthy halal vegetarian recipe with 380 calories and 14g protein per serving.
Ingredients
- 2 cups couscous
- Vegetables: 1 zucchini, 2 carrots, 1 turnip, 1 eggplant, 1/2 cabbage, 1 onion, handful green beans or peas
- 1 can chickpeas
- 1 tsp cumin, 1 tsp ginger, 1 tsp turmeric, 1 tsp paprika, 1/2 tsp cinnamon
- 3 tbsp olive oil, salt, vegetable broth, fresh cilantro
Instructions
- 1Sauté onion and spices in oil. Add harder vegetables, chickpeas and broth. Simmer 20 min.
- 2Add softer vegetables and cook another 15-20 min until tender.
- 3Prepare couscous according to package.
- 4Fluff couscous and top with vegetables and sauce. Garnish with cilantro.
