Moroccan Cold Carrot and Cumin Salad — a healthy halal vegetarian recipe with 110 calories and 2g protein per serving.
Ingredients
- 1 lb (450g) carrots, peeled and sliced into thin rounds
- 1 tsp ground cumin (plus extra for garnish)
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- 1/2 tsp paprika, salt to taste, pinch cayenne optional
- Fresh parsley or cilantro, chopped
Instructions
- 1Boil carrot slices in salted water for 6-8 min until tender but not mushy. Drain and cool.
- 2In a bowl, whisk olive oil, lemon juice, cumin, garlic, paprika, salt and cayenne.
- 3Toss cooled carrots with the dressing. Let marinate 10-15 min.
- 4Sprinkle with extra cumin and fresh herbs before serving cold or at room temperature.
