Ingredients
  • 1 medium butternut squash, peeled and cubed
  • 2 cans chickpeas, drained
  • 1 large onion, chopped
  • 3 tomatoes, chopped or 1 can diced

  • 1 tsp cumin, 1 tsp ginger, 1 tsp cinnamon, 1 tsp paprika, 1/2 tsp turmeric
  • 2 tbsp olive oil, salt, 3 cups vegetable broth, fresh cilantro or parsley
Instructions
  1. 1Heat olive oil in a large pot. Sauté onion and garlic until soft.
