Moroccan Charmoula Roasted Eggplant — a healthy halal vegetarian recipe with 180 calories and 4g protein per serving.
Ingredients
- 2 large eggplants, sliced into 1/2-inch rounds
- Charmoula: 1 cup fresh cilantro and parsley, 4 garlic cloves, 2 tsp paprika, 1 tsp cumin, 1/2 tsp chili flakes, zest and juice of 1 lemon, 1/3 cup olive oil, salt
Instructions
- 1Blend all charmoula ingredients into a thick marinade.
- 2Brush eggplant slices generously with charmoula on both sides.
- 3Roast at 425°F (220°C) for 30-35 min, flipping halfway, until golden and soft.
- 4Serve warm or at room temperature with extra charmoula.
