Moroccan Carrot Salad with Cumin Orange Dressing — a healthy halal vegetarian recipe with 140 calories and 2g protein per serving.
Ingredients
- 1 lb (450g) carrots, grated or julienned
- 1/4 cup fresh orange juice + zest of 1 orange
- 1 tsp ground cumin, 1/2 tsp cinnamon, 1/2 tsp paprika
- 2-3 tbsp olive oil, 1 tbsp honey or maple syrup, salt
- 1/4 cup raisins or chopped dates optional, fresh cilantro or parsley
Instructions
- 1In a small pan, lightly toast cumin for 30 seconds until fragrant.
- 2Whisk orange juice, zest, toasted cumin, cinnamon, paprika, olive oil, honey and salt into a dressing.
- 3Toss grated carrots with raisins (if using) and dressing.
- 4Let sit 10 min for flavors to meld. Garnish with herbs and serve chilled or at room temperature.
