Moroccan Bessara - Fava Bean Soup Simple — a healthy halal vegetarian recipe with 280 calories and 16g protein per serving.
Ingredients
- 2 cups dried split fava beans, soaked overnight
- 1 onion, chopped
- 3 garlic cloves
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp turmeric
- 2 tbsp olive oil, salt, cumin powder and olive oil for topping, fresh cilantro
Instructions
- 1Drain soaked beans. Add to pot with onion, garlic, spices and 6 cups water.
- 2Bring to boil then simmer 35-40 min until beans are very soft.
- 3Blend until smooth. Adjust consistency with water.
- 4Serve hot drizzled with olive oil, extra cumin and cilantro.
