Ingredients
- 1 jar (16 oz) grape vine leaves, rinsed
- 1 cup short-grain rice
- 1 large onion, finely chopped
- ¼ cup pine nuts or walnuts (optional)
- ½ cup fresh dill, mint, and parsley, chopped
- ⅓ cup olive oil (divided)
- Juice of 2 lemons
- Salt, pepper, and 1 tsp allspice
Instructions
- 1Sauté onion in 2 tbsp olive oil. Mix with uncooked rice, herbs, nuts, spices, salt, pepper, and half the lemon juice.
- 2Place 1 tbsp filling on each vine leaf, fold sides and roll tightly.
- 3Arrange rolls tightly in a pot. Drizzle with remaining olive oil and lemon juice. Add water to cover.
- 4Simmer covered 45-50 minutes until rice is cooked. Cool slightly before serving.
