Ingredients
  • 8 large ripe tomatoes
  • 1 cup cooked rice (or quinoa)
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced

  • ¼ cup olive oil
  • 1 tsp dried oregano

Instructions
  1. 1Cut tops off tomatoes and scoop out pulp (reserve).
