Ingredients
- 8 large ripe tomatoes
- 1 cup cooked rice (or quinoa)
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- ¼ cup pine nuts or walnuts (optional)
- ½ cup fresh parsley, mint, and dill, chopped
- ¼ cup olive oil
- 1 tsp dried oregano
- Salt and black pepper
Instructions
- 1Cut tops off tomatoes and scoop out pulp (reserve).
- 2Sauté onion and garlic in olive oil. Mix with rice, herbs, chopped tomato pulp, pine nuts, oregano, salt, and pepper.
- 3Stuff tomatoes and place in baking dish. Drizzle with olive oil.
- 4Bake covered at 375°F for 30 minutes, then uncovered 10-15 minutes.
