Ingredients
- 1 cup long-grain rice (basmati or jasmine)
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, diced
- ½ cup Kalamata olives, halved
- ¼ cup fresh parsley and dill, chopped
- Dressing: ¼ cup olive oil, juice of 2 lemons, 1 tsp oregano, salt & pepper.
Instructions
- 1Cook rice in broth according to package. Cool completely.
- 2Whisk dressing. Fluff cooled rice and mix with vegetables, olives, and herbs.
- 3Toss with dressing. Chill 15 min before serving.
