Ingredients
  • 1¾ cups dry orzo pasta
  • 1 (15 oz) can chickpeas, drained
  • 1 cucumber, 2 tomatoes, 1 red bell pepper, ½ red onion (all diced)
  • ½ cup kalamata olives, halved
  • ½ cup fresh parsley and mint, chopped
  • 4 oz feta (halal), crumbled (optional)
  • ¼ cup olive oil, juice of 2 lemons, 1 tsp oregano, 2 garlic cloves minced, salt & pepper
Instructions
  1. 1Cook orzo according to package until al dente. Drain and rinse under cold water.
  2. 2In a large bowl, combine cooled orzo with chickpeas, vegetables, olives, and herbs.
  3. 3Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Pour over salad and toss. Add feta if using.
  4. 4Chill 20-30 min for best flavor. Serve cold or at room temperature.
