Mediterranean Orzo Pasta Salad (Vegetarian) — a healthy halal recipe with 380 calories and 12g protein per serving.
Ingredients
- 1¾ cups dry orzo pasta
- 1 (15 oz) can chickpeas, drained
- 1 cucumber, 2 tomatoes, 1 red bell pepper, ½ red onion (all diced)
- ½ cup kalamata olives, halved
- ½ cup fresh parsley and mint, chopped
- 4 oz feta (halal), crumbled (optional)
- ¼ cup olive oil, juice of 2 lemons, 1 tsp oregano, 2 garlic cloves minced, salt & pepper
Instructions
- 1Cook orzo according to package until al dente. Drain and rinse under cold water.
- 2In a large bowl, combine cooled orzo with chickpeas, vegetables, olives, and herbs.
- 3Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Pour over salad and toss. Add feta if using.
- 4Chill 20-30 min for best flavor. Serve cold or at room temperature.
