Ingredients
- 1 cup green lentils, rinsed
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes
- 6 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp each: cumin, coriander
- 2 bay leaves

Instructions
- 1Heat oil in a pot. Sauté onion, carrots, and celery for 6-7 minutes. Add garlic and spices.
- 2Add lentils, tomatoes, broth, and bay leaves. Bring to boil, then simmer 30-35 minutes until lentils are tender.
- 3Stir in spinach if using until wilted. Remove bay leaves.
- 4Finish with fresh lemon juice and parsley. Serve hot.
