Mediterranean Chickpea Salad Wrap (Healthy) — a healthy halal recipe with 450 calories and 18g protein per serving.
Ingredients
- 2 (15 oz) cans chickpeas, mashed lightly
- 1 cucumber, 2 tomatoes, ½ red onion, chopped
- ½ cup kalamata olives, ½ cup parsley
- 3 tbsp olive oil, juice of 1 lemon, 1 tsp oregano, salt & pepper
- 4 large whole wheat wraps or pita, greens, optional feta or hummus spread
Instructions
- 1Combine chickpeas with chopped vegetables, olives, herbs, oil, and lemon. Season well.
- 2Spread hummus or yogurt on wraps if desired. Add greens and generous chickpea salad.
- 3Roll tightly, slice in half, and serve immediately.
