Ingredients
- 1 cup red lentils
- ½ cup fine bulgur
- 1 onion, finely chopped
- 3 tbsp tomato paste
- 2 tsp cumin, 1 tsp Aleppo pepper
- Fresh parsley and green onions, chopped
- Salt, olive oil for brushing
Instructions
- 1Cook lentils in 3 cups water until soft and water absorbed. Stir in bulgur, cover, and let rest 10 minutes.
- 2Sauté onion, add tomato paste and spices. Mix into lentil-bulgur with herbs. Shape into patties.
- 3Bake at 400°F (205°C) for 20 minutes or pan-sear. Cool and store. Serve with salad or in wraps. Keeps 5 days.
