Ingredients
- 14 oz extra-firm tofu, pressed and cubed
- 4 cups cooked brown rice
- 4 cups mixed stir-fry vegetables (broccoli, carrots, bell peppers, snap peas)
- 3 tbsp low-sodium soy sauce or tamari
- 1 tbsp sesame oil, 1 tbsp ginger-garlic
- Green onions and sesame seeds
Instructions
- 1Brown tofu in sesame oil. Remove, then stir-fry vegetables 5-6 minutes. Add ginger-garlic and soy sauce. Return tofu.
- 2Divide cooked rice into containers, top with tofu-vegetable mixture.
- 3Garnish with green onions and sesame seeds. Store in fridge up to 5 days. Reheat in microwave.
