Ingredients
- 1 cup quinoa (dry), cooked
- 4 cups mixed vegetables (eggplant, zucchini, bell peppers, red onion)
- 2 tbsp olive oil, oregano, garlic powder, salt
- 4 cups baby spinach or greens
- Lemon-olive oil dressing, cherry tomatoes, cucumber, olives, chickpeas
Instructions
- 1Toss chopped veggies with oil and seasonings. Roast at 425°F for 20-25 minutes. Cool.
- 2Layer in jars: dressing at bottom, then veggies, chickpeas, quinoa, tomatoes, cucumber, and greens on top.
- 3Seal and store in fridge up to 5 days. Shake when ready to eat.
