Ingredients
- 8 large eggs
- 1 cup crumbled feta cheese
- 2 cups chopped spinach
- 1 red bell pepper, diced
- 1 zucchini, diced
- ½ red onion, diced
- ½ cup milk
- 1 tsp dried oregano
- Salt and pepper
- 1 tbsp olive oil
Instructions
- 1 Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
- 2 Sauté veggies in olive oil for 5 minutes. Spread in dish.
- 3 Whisk eggs, milk, oregano, salt, and pepper. Pour over veggies.
- 4 Top with feta. Bake 35-40 minutes until set. Cool, slice, and store in fridge.
