Ingredients
- 2 (15 oz) cans chickpeas, drained
- 1 large bunch kale, stemmed and chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- ¼ cup tahini-lemon dressing (tahini, lemon, garlic, water)
- 1 tsp cumin, salt, pepper
Instructions
- 1Massage kale with a little dressing and salt until tender (2-3 minutes).
- 2Add chickpeas, tomatoes, avocado, and remaining dressing. Toss gently.
- 3Divide into containers. Keeps fresh in fridge for 4-5 days. Add avocado day-of if preferred.
