Ingredients
- 2 large apples, shredded or diced (about 1½-2 cups)
- 1½ cups white whole wheat flour
- 1 tsp baking powder, ½ tsp baking soda
- 2 tsp cinnamon (plus more for swirl)
- ¼ tsp nutmeg
- 2 eggs
- ½ cup unsweetened applesauce
- ⅓ cup maple syrup or monk fruit sweetener
- ¼ cup olive oil
- 1 tsp vanilla
- Optional: ¼ cup chopped walnuts
Instructions
- 1Preheat 350°F. Grease loaf pan.
- 2Mix apples with some cinnamon. Whisk dry ingredients.
- 3Beat eggs, applesauce, sweetener, oil, vanilla. Combine with dry, fold in apples.
- 4Pour in pan, optional cinnamon swirl on top. Bake 45-55 min. Cool fully.
