Ingredients
- 1½ lbs halal chicken breast, sliced
- 4 large zucchini, spiralized
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- ½ tsp red pepper flakes
- Juice of 1 lemon
- Fresh basil
- Salt and pepper
Instructions
- 1 Season and stir-fry chicken in 1 tbsp oil until cooked. Remove.
- 2 In same pan, sauté garlic, add zucchini noodles and tomatoes. Cook 2–3 minutes.
- 3 Return chicken, add lemon juice and basil. Toss gently.
