Ingredients
- 14 oz extra-firm tofu, cubed and pressed
- 8-10 oz fresh spinach
- 1 onion, chopped
- 3 garlic cloves + 1 inch ginger
- 1 (14.5 oz) can diced tomatoes
- 1 tsp each: cumin, turmeric, garam masala
- ½ tsp chili powder
- 3 tbsp olive oil or coconut oil
- ½ cup coconut milk (optional for creaminess)
- Salt and fresh cilantro
Instructions
- 1Pan-fry tofu cubes until golden; set aside.
- 2Sauté onion until golden. Add ginger-garlic and spices. Cook 1 minute.
- 3Add tomatoes and simmer 8 minutes. Stir in spinach until wilted.
- 4Return tofu, add coconut milk if using, and simmer 5 minutes. Garnish with cilantro.
