Ingredients
- 8 large eggs
- 2 cups fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- ½ cup shredded mozzarella or feta
- ½ cup cream cheese, softened
- ½ cup milk
- 2 garlic cloves, minced
- 1 tbsp olive oil
- Salt, pepper, red pepper flakes
- Fresh parsley for garnish
Instructions
- 1 Preheat oven to 375°F (190°C). Grease a 9x9 baking dish.
- 2 Sauté spinach and garlic in olive oil until wilted. Stir in chopped artichokes.
- 3 Whisk eggs, milk, cream cheese, salt, pepper, and red pepper flakes. Mix in veggies and half the shredded cheese.
- 4 Pour into dish, top with remaining cheese. Bake 35-40 minutes until center is set. Garnish with parsley.
