Ingredients
- 6 egg whites (or ¾ cup liquid egg whites)
- 2 whole large eggs (optional for richness)
- 4 cups fresh spinach, chopped
- ½ small onion, diced
- 1 tomato, diced (optional)
- 2 garlic cloves, minced
- 2 tbsp olive oil or butter
- ¼ tsp turmeric (for color)
- Salt, black pepper, and red pepper flakes
- Fresh herbs (parsley or dill)
Instructions
- 1Whisk egg whites (and whole eggs if using) with salt, pepper, and turmeric.
- 2Heat 1 tbsp oil in a non-stick pan. Sauté onion and garlic for 2 minutes. Add spinach and cook until wilted. Remove and set aside.
- 3Add remaining oil to pan. Pour in egg mixture and cook until edges set.
- 4Add spinach filling to one side, fold omelette, and cook 1-2 more minutes. Serve hot.
