Ingredients
- 4 large bell peppers, halved and seeded
- 4 cups riced cauliflower
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes, drained

- ½ cup shredded halal mozzarella or crumbled feta
- 2 tbsp olive oil

Instructions
- 1Preheat oven to 400°F. Drizzle pepper halves with oil and pre-bake 10 minutes.
