Ingredients
- 1 large head cauliflower, cut into small florets
- 1 small onion, finely chopped
- 2 tomatoes, chopped
- 3 garlic cloves + ½ inch ginger, minced
- 1 tsp cumin seeds
- 1 tsp each: turmeric, coriander powder, garam masala
- ½ tsp chili powder or paprika
- 2-3 tbsp olive oil or ghee
- Fresh cilantro for garnish
- Salt to taste
Instructions
- 1Heat oil in a large pan. Add cumin seeds; once they splutter, add onion and sauté until golden.
- 2Add ginger-garlic, tomatoes, and all spices. Cook 4-5 minutes until tomatoes soften.
- 3Add cauliflower florets and salt. Stir well, cover, and cook on medium-low for 12-15 minutes, stirring occasionally until tender but not mushy.
- 4Uncover and cook 2-3 minutes for slight crispness. Garnish with cilantro.
