Lentil Walnut Meatball Subs — a healthy halal recipe with 480 calories and 20g protein per serving.

Ingredients
  • 1½ cups cooked green lentils
  • 1 cup walnuts, toasted and chopped
  • 1 small onion, 3 garlic cloves
  • ½ cup rolled oats, 2 tbsp tomato paste
  • 2 tsp Italian herbs, salt & pepper, 1 flax egg (1 tbsp flax + 3 tbsp water)
  • 2-3 cups marinara sauce, whole wheat sub rolls, optional cheese
Instructions
  1. 1Preheat oven 400°F. Pulse all ingredients except marinara until combined.
  2. 2Form into meatballs. Bake on lined sheet 22-28 min until firm.
  3. 3Warm marinara sauce and add baked meatballs. Simmer 5 min.
  4. 4Serve in toasted sub rolls with extra sauce.
