Lentil Vegetable Soup (One-Pot) — a healthy halal recipe with 230 calories and 12g protein per serving.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 cup green or brown lentils, rinsed
- 1 (15 oz) can diced tomatoes
- 6 cups vegetable broth
- 1 tsp cumin, 1 tsp Italian seasoning, bay leaf
- Salt, pepper, fresh parsley
Instructions
- 1Sauté onion, carrots, celery 6 min. Add garlic and zucchini 2 min.
- 2Stir in lentils, tomatoes, broth, and spices. Bring to boil.
- 3Simmer 35-40 min until lentils are tender. Remove bay leaf, garnish with parsley.
